Quinoa Pilaf

   

 

Quinoa is rather plain taste. Therefore it is easier to make it tastier as your desire. I would use Shiitake Mushroom, and saute in olive oil to make it my base taste.

 

 

 

 

 

 

 

 

 

 

 

 

Ingredients

3-5 Dried Shiitake Mushrooms, soaked and diced (save soaking water).

1 cup organic quinoa rinsed and drained.

4-5 red radishes, 3 inches of leek, hand full of parsley, Chinese radish, some lotus roots, some carrots, celery, some celery roots, collard and mizuna( arugula?). Any vegetable in your refrigerator will be OK.

 

Directions;

1, soak shiitake mushroom for 15 to 30 minutes, dice them when soft.

2, heat up a pan medium, then put 1 to 1.5 table spoon of extra virgin olive oil in a pan,

3, saute shiitake mushrooms for a few minutes.

4, put root vegetables to 3, and saute with mushrooms, until carrots become soft.

5, Add 1/2 to 1 cup of water and put cover on, cook strong heat for couple of minutes, then cook another 10 to 15 minutes.

6, remove cover and put small amount of sea salt and pepper to your liking.

6, Add green leafy vegetables, stir and mix well, simmer for 3 to 5 minutes.

7, Transfer to the plate and serve.

8, You can sprinkle grated sesame seeds, or pumpkin seeds.
