Ramen Noodle
Converting spaghetti noodle to Ramen noodle.
To add 1 Tbsp of baking soda when the water is boiling, put the noodle in. There is chemical reaction that cause Kan-Sui to be created when the bubble(CO2) raised up. This Kan-Sui makes the noodle the distinctive ramen texture. Normally you need to boil a few minutes longer than the package instructed. I use the whole wheat spaghetti noodle but you can use any kind of noodle. Use Konbu(sea weed) and Shiitake mash room for the soup, and add other vegetable. I tried for a few times with this method, it really works, like a magic. Here the some of pictures for my Ramen noodle soup. ( You need to boil the noodle extra 2~3 minutes.)
